Between working almost every day, some times twice a day, it's hard to find time to cook for oneself... But there are certainly ways that it can be accomplished! Just think, it's so much better to cook for yourself; knowing every ingredient that goes into your food, and there's nothing that you can't pronounce! Not to mention, there's a feeling of pride when...Read More

Lets talk about pomegranates for a second... they're kinda strange, right? In my opinion, it's kind of hard to work with the fruit to get to all of those delicious little seeds, called arils. Whatever the method you use to attain them (there are plenty of tutorials online) it's worth it. They're juicy, sweet, and not to mention pretty. Oh, and the seeds...Read More
Bowls have to be my new favorite fad. I've always loved burrito bowls... Buddha bowls are great, and now, I can say that I've tried the infamous smooth bowl! Josh and I are usually not really up to date with what's "trendy" but after seeing what people were doing with smoothie bowls, we decided we had to give it a try. On top...Read More
I have to start off by saying that I'm a firm believer that biscuits and gravy for breakfast is the ultimate hang over cure. Here in Carbondale, there are several restaurants that serve biscuits and gravy, none of which have disappointed me. (If you're ever in town, you've gotta try Harbaugh's, Long Branch's, and Mary Lou's biscuits and gravy!) I honestly hadn't tried...Read More
Josh and I almost always have some sort of leafy green in the fridge. I like them for salads, dinner dishes, and even smoothies. This time around we had a bunch of spinach.

Pesto is made with simple ingredients, but it creates a variety of flavors that'll satisfy your tastes buds without a doubt!
Driving home from Nashville, I noticed a handful of billboards announcing how much the average American wastes (this wasn't the first time I had noticed this...) and I'm really trying to commit to using everything that we buy. So, the spinach being a couple days old, was ready for new life in this super tasty, earthy, and lightly bitter "pesto."
Pesto is so easy to make, and pairing it with dishes seems almost endless.
(and wine... pair it with wine...)
What You'll Need:
-1 or 2 Large Cloves of Garlic
-1 Heaping Cup Spinach
-1/4 Cup Walnuts, chopped and roasted
-2 1/2 Tbsp Parmesan
-3 1/2 Tbsp Extra Virgin Olive Oil
1. Heat the oven to 400º F. Roast the chopped walnuts until fragrant. This doesn't take much time at all, 5 minutes at most.
2. In a food processor, or blender, add the olive oil, spinach, garlic, parmesan, and once the walnuts have cooled, the walnuts! Blend until a paste has formed.
Toss this in pasta, top off meat with it, maybe use it in place of sauce on a pizza or a flatbread? Whatever you choose, enjoy! :)

PDF download: Mediterranean Lemon Chicken
This download is an index card sized recipe card download for the lemon Chicken that Josh
and I enjoyed with our Spinach Pesto!

We paired our spinach "pesto" with lemon chicken, and roasted potatoes. I had actually bought asparagus to go with this meal specifically, and somehow completely forgot to make it! :( However, I was still satisfied with the meal.
Don't forget to download our free recipe card! It's a pdf download, and it'll fit perfectly onto an index card! Not to mention, that lemon chicken was amazing with the Spinach "Pesto!"
Tell us what you think - or comment below what you'd pair it with?
As always, enjoy!!
Josh and I were just in Nashville this past weekend. The trip was amazing. Every time we go back I find it harder and harder to go back to Carbondale. I've got the moving bug - or maybe a travel bug - I seriously want to see everything (and taste everything.) In Music City it seems as if there is never a dull...Read More
