Pumpkin Cheddar Soup

The other day Josh and I made bread bowls.... but what is a bread bowl without something to put in it!? Well, we've got your back: Pumpkin Cheddar Soup! Yes, I know, it's so fall, and not to mention, super delicious! Throw this together in a crock pot for a tasty, minimal work required recipe. Pumpkin, spices, and the cheddar cheese really come together in this comforting fall soup.

What You'll Need:
-4 Cloves Garlic
-1 Medium Sweet Onion
-1/2 Cup Carrots, julienned 
-1/2 Cup Celery, julienned
-3 Cups Vegetable Stock
-2 1/4 Cups Pumpkin Puree
  (I just bought canned, unseasoned pumpkin puree)
-1 tsp Fresh Thyme
-1/2 tsp Fresh Rosemary, roughly chopped
-1/2 tsp Salt
-1/2 tsp Black Pepper
-1/4 tsp Cardamom
-1/2 Cup/ 4 Oz Cream Cheese
-3/4 Cup Cheddar Cheese
(I always pick sharp cheddar!)

1. Chop and prep all of the vegetables, and herbs. Set everything aside!
2. Set the crock pot to low, add in the vegetable stock, pumpkin puree, garlic, all the herbs, salt, and pepper. Stir everything together until the soup looks blended together. 
3. Then add all the vegetables. Cover the crock pot and slow cook for about 3 and half hours. Stirring occasionally. 
4. Add in the cream cheese, and the cheddar, and stir. Don't worry that the cream cheese doesn't melt in right away. Cover the crock pot and cover for another 2 and a half - 3 hours. 
5. Make sure to stir everything together thoroughly before serving! If you've made our bread bowl recipe, serve it in that! It's seriously amazing!

 


Add in all of the ingredients, besides the cheese, to the crock pot!


Wait it out for about 3 hours, then add the cheese!


Let it sit for another 3 hours. Make sure to stir in the cheeses thoroughly before serving the soup!



Like I said, what's better than soup in a bread bowl? It's like adding in extra comfort, I swear. Not to mention, tear and dip, it's my favorite part.
